Shrimp and Sweet Potato Fritters

If you love shrimp and sweet potatoes but never thought they would go good together, try these and you won't be disappointed!

Ingredients:
1 large orange fleshed sweet potato, grated
1 lb. shrimp, shelled and deveined, coarsely chopped
2 scallions, thinly sliced
1 teaspoon fish sauce
2 teaspoons freshly ground black pepper
1/2 teaspoon salt
1/4 cup all purpose flour
1 teaspoon baking powder
1 egg
Peanut oil, for frying

Method:


Combine all ingredients in a large bowl and mix well.

Using about 2 tablespoons for each fritter, shape into patties.
Heat about 2 inches of oil for shallow frying. Gently place patties in hot oil and fry until golden and crispy on both sides, about 4 minutes on each side.


Drain on paper towels.
