Phanasa chi Bhaji
It is a recipe not commonly known to many people. It's easy to make, only the vegetable cutting is a bit of work.
1 kg small phanas/raw jackfruit (young & tender)
½ cup grated gud/Jaggery or as per taste
1 cup scraped fresh coconut
½ cup cashew nuts and groundnuts
Salt as per taste
1 cup oil
For Tadka- 1 tsp rai, ½ tsp Hing powder, ½ tsp Haldi powder
½ cup chopped green coriander
1) Apply oil to a Knife and your hands and cut Jackfruit in to slices.
2) Remove the skin and cut into half-inch cubes.
3) Pressure-cook these cubes with cashew nuts and groundnuts and 1 cup water.
4) Make a Tadka, add red chilli pieces, add cooked jackfruit, salt, gud, and fresh
coconut, and cook for 5-6 minutes.
5) Garnish with coriander.
6) Serve with Roti.
